Marinated Mushroom Salad

Ingredients

  • 60gms fresh button mushrooms

  • 10gms shiitake mushrooms

  • 5gms gucchi (morels)

  • 50gms spring onions (finely chopped)

  • 5gms garlic (finely chopped)

  • 10ml lemon juice

  • 10gms pine nuts (chilgoze)

  • 5ml extra virgin olive oil

  • salt and pepper to taste.

Instructions

  • Soak  the gucchi and shiitake mushroom for half an hour. Slice the button mushrooms and keep aside.

  • Heat oil in a nonstick/heavy bottomed pan. Add garlic, spring onion (bulbs only) and toss till done.

  • Add all the mushrooms, cover and cook till done.

  • Season with salt, cracked pepper and lemon juice.

  • Serve warm garnished with spring onion greens and pine nuts.
